CAVOLO NERO AND CRESCENZA CHEESE RISOTTO
Ingredients for 4 people:
PROCEDURE:

– Wash the cavolo nero, remove the heart and chop the leaves finely.

– Chop the shallot and lightly brown in a saucepan

– Add the cavolo nero and lightly brown it for 5 minutes

– In a separate pan bring the water to the boil for cooking the rice

– Toast the rice

– Add the Brodo Well Granular Form Vegetable Bouillon

– Brown it and simmer with white wine until reduced

– Continue cooking for twenty minutes continuing to slowly add the cooking water

– Mix until creamy with the crescenza cheese.

– Serve and add a sprinkling of pepper to finish.
